These last two weeks have been a little discouraging. I was determined to excersice at least 3 times a week and drink plenty of water. Alas, I failed miserably. On the other hand, John is still making steady progress!

For my February 30 Meals in a Day cooking session, I made this fabulous Taco Soup for the first time. I tripled this super easy recipe which made enough for four meals.
The entire family loves it. The kids even ask for seconds and thirds! The seasoning is perfect and at only 237 calories per serving an excellent choice for our low calorie diet.
