Cheese Beef & Noodle Casserole

Cheese Beef and Noodle

Check out this low calorie Cheese Beef & Noodle Casserole we had for dinner tonight. It’s one of the 10 meals our favorite cook made for us. It’s definitely a keeper and freezer friendly!

I got this recipe out of the Weight Watchers One Pot Cookbook {also available on Kindle} I purchased a while back.

I’d love to stay connected.

Healthy Sloppy Joes

Healthy Sloppy Joes

Here’s what we had for dinner tonight, Healthy Sloppy Joes.

It’s so hot out that no one feels like eating much. I also don’t feel like cooking in a hot kitchen, so we’re taking advantage of our freezer cooking meals. This recipe for Healthy Sloppy Joes with a side of carrots and fresh pineapple really hit the spot.

What do you eat on these HOT summer days?

Freezer Cooking Week

The month of May and beginning of June are a total blur. I have finally recovered from all the end of the school year recitals, concerts, evaluations, contests and the big home improvement projects we tackled (more on those to come :)). Needless to say, I did not do much cooking during that time and my freezer was getting pretty empty.

This time, my freezer cooking session was split up over several days. I just […]

March Freezer Cooking – Part 2

Tomato-Ricotta Spaghetti

Let me just start with saying how thankful I am for freezer cooking. I’ve been sick for almost a week now and having meals in the freezer, ready to go has been such a blessing!

Here’s what happened on day 2 of my March 30 Meals in a Day cooking adventure. (Really, it’s more like 30 meals in two days, because I realized after my first try that this would be much easier for me […]

30 Meals in Day Menu Plan – March

It’s time to prepare for another 30 Meals in a Day cooking session. Last month’s session was such a success that I’m excited to do it again. I’ll be trying out a few new recipes this time.

If you’ve never cooked like this before, here are two big reasons why you should give it a try.

1. It Saves Money.

Every two week I pull out a set amount of cash to use for grocery […]

30 Meals in a Day – I did it!

30 Meals in a Day

Wow! The last two days are a little bit of a blur. I still have to pinch myself, because I can’t believe I actually cooked not just 30, but 32 meals this weekend. It’s so satisfying to open the freezer and see all those yummy, ready-to-go meals. In fact, we already had one last night.

Here’s a peek inside my fully stocked freezer.

You might have noticed that I cooked 32 meals in a […]

30 Meals in a Day

Last week, I had a little bit of a meltdown. I was feeling completely overwhelmed by all of my responsibilities. After sharing my struggles (and my wish for obtaining a personal chef :)) with a friend, she suggested I try cooking 30 meals in a day. Planning and preparing healthy meals, to help with our goal of losing weight, has been an incredible challenge. The idea of having 30 meals in the freezer (ready to […]

Beef Stroganoff

Beef Stroganoff

Sunday lunch at my Grammy’s was something we always looked forward to. She was famous for her beef stroganoff. Today, I tried out this healthier Beef Stroganoff recipe. I served it with mashed potatoes (like my Grammy did) instead of the egg noodles.

It was so good and I will definitely be making this again!

Easy Roast Beef & Healthy Mashed Potatoes

Roast Beef and Mashed Potatoes

I’ve been trying to come up with some healthy meals to help me with my big goal of losing 30lbs. Here’s what we had last night.

I doubled both recipes and put half in the freezer for a later time.
