Healthy Cocoa Fudge Cookies

Cocoa Fudge Cookies

It’s Thursday and we host Bible study tonight. I always like to serve a little snack.

The challenge: several attendees have made a resolution to lose weight and I don’t want to tempt them (or myself!) to break that commitment. (Check out these posts for more on my weight loss journey.)

I came accross this recipe for Healthy Cocoa Fudge Cookies and decided to give it a try.

I debated whether or not to […]

Ingredients 3 c. sugar 2/3 c. evaporated milk 1 ½ sticks of butter 1 pkg. […]

What we did on our Christmas break – Part 1

Everyone is all dressed up and ready for church.

After church we sat down for our traditional dinner including ham, rice, corn, salad, feta and olives. For dessert we enjoyed some of the sweet treats we made earlier in the week: Grammy’s no bake cookies, maple fudge, chocolate fudge, […]

We decorated the porch.

Grilled up some steak and hot dogs.

Tossed salad.

Dessert – Caramel Brownies {I’ll post the recipe a little later today :)}

Lite Peanut Butter Pie

Lite Peanut Butter Pie

Here’s a skinny version of the peanut butter pie I made for Thanksgiving. We taste tested it at our family Valentine’s Day dinner and everyone loved it. There honestly was no difference in taste and the skinny version is almost 60 calories less per serving!

Ingredients

8 oz package of neufchâtel cheese, softened at room temperature 1 pkg. fat free whipped topping, thawed 2 Tbs. powdered sugar 1/4 cup reduced fat peanut […]

Super Easy Christmas Party Snack Mix

Christmas Party Snack Mix

A dear friend of ours has given us some of her Christmas party snack mix for many years now. It’s always such a treat and tastes delicious.

I followed this part snack mix recipe over at Allrecipes and love how you just throw everything in a bowl and mix it together. After reading some of the recipe reviews I tweaked it a little.

I used:
