Lite Peanut Butter Pie

 

Here’s a skinny version of the peanut butter pie I made for Thanksgiving. We taste tested it at our family Valentine’s Day dinner and everyone loved it. There honestly was no difference in taste and the skinny version is almost 60 calories less per serving!

 

Ingredients

  • 8 oz package of neufchâtel cheese, softened at room temperature
  • 1 pkg. fat free whipped topping, thawed
  • 2 Tbs. powdered sugar
  • 1/4 cup reduced fat peanut butter
  • 2 Tbs. skim milk
  • Chocolate pie crust
  • Sprinkles of your choice

 

1. Mix together softened cheese, powdered sugar, peanut butter and milk.

2. Add half of the whipped topping. Fold in.

3. Spread mixture into pie crust.

4. Spread remaining whipped topping on top of the pie.

5. Sprinkle on sprinkles of your choice. I used turtle crunch.

 

8 servings – 325 cal. per serving
