Here’s a new recipe we tried out for our March 30 Meals in a Day freezer cooking session.

Tomato-Ricotta Spaghetti

Let’s just say, we love it! I knew it would be good when I was making it. The olive oil just gives it such great flavor!

To prepare for freezing, I followed the recipe except for adding the ricotta cheese. I wasn’t sure how the cheese would freeze and figured it would be easy enough to add when warming up the spaghetti for dinner.

This is a great low calorie and tasty meal, perfect for freezing.
