Let me just start with saying how thankful I am for freezer cooking. I’ve been sick for almost a week now and having meals in the freezer, ready to go has been such a blessing!
Here’s what happened on day 2 of my March 30 Meals in a Day cooking adventure. (Really, it’s more like 30 meals in two days, because I realized after my first try that this would be much easier for me :))
I started out making this fabulous Tomato-Ricotta Spaghetti.
Next, I got the Hearty Beef Potato Stew cooking on the stove. While the stew was simmering I made four Chicken Enchilada Casseroles, cooked up the Orange Chicken, and made the beef and rice mixture for the Taco Rice Salad.
I fully intended to attempt to make frozen pizza but ran out of energy and time. This experiment will have to wait for another day.
We’ve been enjoying these new-to-us meals and I’ll let you know how we like them over the next couple of weeks.
