It’s here, my second freezer cooking session of the year!
I had a little time yesterday, so I decided to get a head start. I made 3 dozen muffins, blueberry, honey bran, and chocolate chip, all from a mix.
The Chocolate Chip Whole Wheat Pancakes turned out better than ever. I more than doubled the recipe which yielded almost 30 pancakes. These are my absolute favorite! (By the way, I love this cooking rack my sister gave me a while back. I use it all the time, a great space saver and easy to use!)
Finally, I prepared and baked the BBQ Pork Chops. So yummy! I can’t wait to eat them.
I also cooked up some sausage for Breakfast Burritos and pulled the chicken off the rotisserie chicken for the Chicken Enchilada Casserole.
Now, off to a full day in the kitchen. Here’s my 30 Meals in a Day March Menu that I plan on completing today. Have a great Saturday!!!
